The chocolate truffle is perhaps the penultimate confectionary experience. Our truffles are individually hand formed and hand dipped at our Santa Fe candy kitchen. Therefore, each truffle is unique no assembly line uniformity here. Inside the truffle, we start with our basic chocolate fudge recipe, but create a softer candy that is suited to forming for the truffle. Then we add an array of natural flavorings to create a complex experience for the palate. Finally, we hand dip each truffle center in the finest Guittard Prestige Dark chocolate. These truffles are to savor, like a fine wine. You will notice the flavors changing in your mouth from the moment you first bite into the confection until the last drop melts on your tongue.
As with all C.G. Higgins Confections, you won't find any ingredients on our labels that you cant pronounce. Nothing artificial added, not anything that you could not find in your own kitchen. A touch of rosemary oil, a natural anti-oxidant, helps to keep our truffles fresh a little longer. As with all fine chocolate, please store your truffles in a cool place. If you refrigerate them, bring them to room temperature before serving for the best flavor and texture.
