Our nut brittles are simply the finest made in the United States. As with all C.G. Higgins Confections, we begin with pure basic ingredients like sugar, corn syrup, butter and vanilla and cook them together in copper kettles in our Santa Fe candy kitchen. At just the right moment, we add nuts and then pour out the candy on a large marble slab. Then we gently hand stretch the brittle while it is warm and pliable. This key technique results in a brittle that is light and tender, pleasantly crunchy not hard and sticky. Once you have tasted it, you will realize that you have never experienced such a fine nut brittle.
You won’t find any ingredients on our labels that you can’t pronounce. Nothing artificial added, not anything that you could not find in your own kitchen. A touch of rosemary oil, a natural anti-oxidant, helps to keep our brittles fresh a little longer.
